you mean the email sent in Share screen? if so, I think this can be done, please open App_LocalResources/Share.aspx.resx in a xml editor, for example, Visual Studio, find key "MailBody.Text", you can see the email template can be customized, you can replace [PORTALLOGOURL} with your own image. thanks.
